It’s almost…almost….time for outdoor eating! By far my favorite time of the year is when we can head up to our roof (that’s the equivalent of a backyard for those of us in the city), grill, and eat outside with friends. It’s like an impromptu party all the time. But, I like to keep it simple. Isn’t that one of the best things about spring and summer cooking? Plenty of fresh ingredients that you can pull together quickly that can be both healthy and delicious. This Watermelon Feta Salad is one of my favorites and always a crowd pleaser.
Combine watermelon , feta , and mint in a large bowl. Toss gently to combine. Add In black pepper. I used 3 twists of the pepper grinder.
Tip: This salad will keep for a few days in the fridge. I made it for a Friday night barbecue and we ate it again on Sunday night.
