Here is an easy “Meatless Monday” (or any day really!) recipe. Wrap in tortillas (Gluten free tortillas are delicious here to keep the meal gluten free!) or eat as is. I threw these together one day based on ingredients I had in the house and they were so delicious I had to share!
1 Tablespoon Grapeseed oil (Use Extra Virgin Olive Oil if that’s what you have on hand)
1 large onion, chopped
1 cup cooked brown rice
1 15 ounce can organic red kidney beans
2 cups fresh chopped spinach
1 Tablespoon Cumin
Sea Salt and Fresh Ground Pepper to taste
1/2 cup chopped Cilantro
Non Fat Greek Yogurt (A healthier, protein packed option to Sour Cream)
Heat Oil in a large skillet over medium heat. Add onion and saute until soft, about 4 minutes. Add in cooked rice, beans, cumin, sea salt, and pepper. Stir to combine. Add in chopped spinach. Cook for 5 minutes until the spinach is wilted and all the ingredients are heated through. Add chopped cilantro.
Spoon into tortillas and top with additional toppings if using.
