I love cauliflower. It’s got a ton of vitamin c, finer, and phytonutrients. However, my husband did not so I just didn’t make it very often. I decided to try some new things to get my family to eat it. And it worked! Here are some ways to make cauliflower that you may not have tried before that your family will love!
1 Tablespoon Organic Extra Virgin Coconut Oil or Grape seed Oil
1 large or 2 small heads of cauliflower
bunch of scallions
sea salt and fresh ground black pepper (to taste)
Wash and remove the green leaves from the cauliflower. Chop into small pieces and put into a food processor. Pulse until you have a rice like consistency.
Heat oil in a large skillet over medium heat. Add scallions and saute for 2-3 minutes until soft. Add cauliflower and cook for approximately 7 minutes. Season with sea salt and pepper
Serve as a side with anything you would use rice for!
