So, it’s a balmy 9 degrees here in Brooklyn (minus 2 with the windchill). Will this winter ever end??? Looking forward to a weekend getaway with the family tomorrow! Here’s a hearty, healthy, delicious Lentil Chicken stew recipe that’s perfect for the crazy cold weather!
2 Tablespoons Extra Virgin Olive Oil
1 pound organic boneless, skinless chicken breast ,cut into 1″ pieces.
1 sweet potato, peeled and diced
2 carrots, diced
1 onion, chopped
4 garlic cloves, minced
1 cup dried lentils, rinsed
4 cups organic low sodium chicken broth
1 tablespoon Cumin
1 teaspoon dried Oregano
1 teaspoon sea salt
fresh ground black pepper, to taste
1 cup fresh baby spinach
Heat 1 tablespoon olive oil in a large pot. Sauté chicken until no longer pink. Remove chicken with a slotted spoon. Add remaining oil. .Add onion and garlic, a little sea salt, and cook until onions are soft and slightly browned. Add carrots, sweet potatoes, and spices and cook for 5 minutes. Add broth and lentils and bring to a boil. Add chicken back in. Reduce heat to low and simmer for 25-30 minutes. Add spinach and cook another few minutes until spinach is wilted. Check for seasonings and serve
