I’m slightly obsessed with Farmer’s markets-ok, markets of any kind. So, I may have gone slightly overboard at the Borough Hall Green Market on Saturday. And this was on top of my weekly CSA package. As I was washing and prepping veggies for the week (this is a lifesaver-if I don’t do this on Sunday or Monday I wind up not using half of it and throwing it all out), I realized I hadn’t done any other food shopping for the week and didn’t have any meat.

I had an idea (half because I thought it would be a fun challenge to my family, and half because I REALLY wanted to go to brunch instead of go food shopping before my nephew’s birthday party this afternoon). So, I asked my husband and daughter (it really wasn’t optional lol) what they thought about 5 days of vegetarian dinners. Both were on board and we started brainstorming recipes. I always say it’s so much easier to get kids eating when you get them involved in the process (and husbands too!). Some of the meat free recipes Isabella requested: Tofu and black bean tacos, veggie soup, and a frittata. Bill’s one request-veggie chili and spiralized potatoes. And of course, need to use those Purple beans Isabella had to have!
For the next 5 days, I am going to make some of our favorites (tofu black bean tacos), as well as try to come up with yummy vegetarian recipes using only my CSA and farmers market produce and whatever pantry items I already have. Check back each day for a new recipe!
