It was a great long weekend and the best part of it was we spent a lot of it at home. Yesterday afternoon was some impromptu pumpkin fun. Isabella asked to carve an Olaf and Perry (Phineas and Ferb fans anyone ?) pumpkins this year. And, this is really way easier than it looks. My hubby will be the first to tell you he’s not exactly artistic. More details on how to carve a character pumpkin later this week
You can tell who does what in our house because as Bill started the carving , Isabella said “Mom, it’s time to get cooking!”.
So today we made some pumpkin seeds. We decided on two varieties -a sweet (coconut sugar and cinnamon ) and a savory (Garam Masala spice and Pink sea salt).

It’s so easy to make this yummy , healthy snack.
Make sure you lay the pumpkin seeds out on paper towels and dry them out before roasting.
Preheat oven to 300 degrees.
Add 1 1/2 tablespoons of extra virgin olive oil to a large sheet pan. Add pumpkin seeds and toss to coat with the olive oil
Roast for approximately 30
Minutes, until golden.
Drizzle with a little olive oil , add your choice of spices and toss to coat.
